The effects of bigger to smaller? I know it holds more charge, but what does that do? Provide more heat protection?

Put it this way a 1000mF cap will charge up faster then a 3300mF cap.......going to a 1000mF cap will help the esc last longer and stay cooler with hotter motors.

...so if a 1000mF cap will keep the esc cooler and charge faster, why would you run a 3300mF? Does it provide that much more punch?

3300mF stores more voltage.....think of it as a battery the more mah you have the longer you have time to play.....And Brandon didnt you read the link about Capacitors.....Reposting the link just for you Brandon.......

Capacitors can also be invaluable if you're running a sensorless brushless setup. It can greatly diminish cogging since it gives the motor an initial "oomph" (yes... "oomph" is a clinical term ).
Great write-up Baldy!
