Brushless question

What's the difference between a sensored and sensorless brushless motor?
Can a brushless esc. rated for a sensored brushless motror be used for an unsensored and vice versa?

So basically to keep it simple no mix and matching. So which is better sensored motor or unsensored? I'm guessing sensored. Also some motors and esc's don't specify sensored or unsensored, is it practical to assume sensorless if not specified otherwise?
